Every once in a while, you find a recipe that cannot be ignored. On a warm summer day, you cannot find anything more refreshing than watermelon. This recipe takes that one-step further. Watermelon popsicles. Yumm!
What you need:
1) 1 pound watermelon
2) 2 tablespoons sugar
3) 2 tablespoons limejuice
What to do:
Cut the watermelon into small chunks (discarding the rind), and put them in a blender with the sugar and lime juice. Process until smooth, adding enough water (or fruit juice) so that the mixture liquefies. Pour into Popsicle molds, and freeze.
Try some different variations if you feel adventurous. Some ideas in the comments included adding Greek yogurt, strawberries, lemon, mint, and basil.
